The Fleurieu Peninsula proudly weathers the wild southern ocean. In the lee of the mount lofty ranges, the fleurieu coast extends from the sandy surf beaches of coorong to the windswept rugged clifftops of the cape. Situated on the waters edge in the river port of goolwa is our distillery. It is here the whisky develops expressive maple and vanilla oak overtones mixed with spicy sea-air aromas. These elegantly combine to create a smooth bodied character that comes only from maturation on the southern coast.

The Bivouac is an acknowledgement of another pivotal moment for @fleurieudistillery and at @fleurieudistillery there is somewhat of a tradition of producing a special whisky to mark pivotal points in their whisky journey. The Bivouac signifies a temporary resting point in their journey before launching into a new campaign and exploring new horizons.
Sounds exciting, and the whisky sounds delicious too!
“Bright polished copper in colour, on the nose The Bivouac displays hints of dried fruit, golden syrup and orange rind. Light toffee characters, sweet stone fruit and a spice mix of cinnamon, nutmeg and allspice on the palate, finishing with Medjool dates and tamarind with sweet tangerine over a touch of maritime salt.”

Posted @withregram • @sadistillerytrail Today’s recent spirit release comes to you from @fleurieudistillery located on the wharf in the beautiful river port of Goolwa, and we can assure you that this is one very unique drop.
The French phrase ‘de Garde’ literally means ‘to keep’. Europeans have a habit of buying wines, spirits and even some ales to lay them down in cellars ready for the hard times. Us Aussies, however, generally consume 95 % of what we purchase from the cellar door within the first few weeks of purchase.
After sifting through museum stock @fleurieudistillery noticed that their first fill cask whiskies had changed over time. They were much softer in comparison to the original tasting notes taken when they were first released. And that`s how the concept of Whisky de Garde was born.
Bottled at cask strength, Whisky de Garde is a Single Malt that has been specifically designed to be opened in August 2026 – five years from its release. While a lovely balanced sipper now, @fleurieudistillery believe it will be softer and rounder in five years and therein lies the challenge!
